Different dishes cooked in Malawi that incorporate sweet potato

Sweet potato workshop

The sweet potato cooking workshops continue in other villages. The farmers growing the potatoes, and selling their surplus at market, are really keen to teach their community the different recipes that they can make using orange-fleshed sweet potatoes.

During a meeting at a village near Mpamba, more than 70 people turned up to learn and watched the cooking workshop which included a variety of recipes from adding the sweet potato skins into an omlette to making porridge from mashed sweet potato.

Other recipes that took longer included the doughnuts and the ‘one-pot’ recipe which included sweet potatoes cooked with tomatoes, onions, groundnuts, eggs, and sweet potato leaves.

After the cooking was over, the group explained what they had made and how, and what the benefits were in each dish.

It is really great to see that diets are improving and more people are including these orange-fleshed sweet potatoes into their meals.
